Stumbled upon this newly developed (yes, GMO) purple cherry tomato. Found the bio-engineering process fascinating so decided to give them a shot. The purple color comes from crossing a cherry tomato with a purple snapdragon. The purple color is produced by Anthocyanins which have been proven to have antioxidant and anti-inflammatory properties. Anthocyanins are what gives blueberries, blackberries, eggplant and purple cabbage their color.
