i had some white sand around. i thought that the white would reflect the sun light evenly. any thoughts on this?

Since the fruit should be shaded anyway, the color of the sand won't matter. Only the physical size & shape matters & then only because this affects the stability. Irregularly shaped & sharp sands tend to pack & hold their shape the best (IE Builders Sand). Rounder & regularly sized sand like Play & beach sands drain better but tend to move too easily if used alone.
