Can i leave the seeds in the pumpkin until I carve it in around 25 days or so and still have good seeds if pumpkin is kept cool? Above freezing around say 10 to 15 C or should be cooler. Or should i take seeds right away?

It was no problem for me leaving the seeds inside till Helloween last year. If you cut open a pumkin now for whatever reason it is very likely it will be rotten real bad in 25 days.

I left mine last year till prior to ThanksGiving and all was great I did not cut into it till then, but it wasnt pulled from the plant until around Oct 19th.... it was very cold inside, froze my hands off and Ill do it this year when its warmer.

It will usually work ok for most of the seeds
A few may sprout in pumpkin
If it gets a little warm, occasionally ferments inside
Even then, the seeds that don't fall in slop are ok

But I did have once (out of some 20) that everything was rotten slop.

If the temperatures are warmer than the mid 60's then you run the risk of finding the seeds germinated inside the pumpkin when you open it up.

Keep it as COOL as possible.
